Katla Fish (Bengal Carp)
A staple of authentic Indian households, Katla is one of the most popular freshwater fishes in the country. Known for its large, meaty head and thick, broad body, our Katla is sourced from fresh river waters to ensure you get that signature sweet and delicate taste that pond-raised fish often lack.
Best For: Traditional Katla Kalia, Mustard Fish Curry (Shorshe Maach), or simple pan-fried marinated steaks. The head is also a delicacy used in the famous "Muri Ghonto."
Chef’s Tip: To remove any "earthy" freshwater scent, rub the fish pieces with a mixture of turmeric and salt and let them sit for 5 minutes before rinsing. Always shallow fry the pieces slightly before adding them to a curry; this prevents the delicate flakes from breaking during the simmering process.
