The undisputed "King of the Ocean," Surmai is one of the most popular and premium marine fishes in India. Known for its distinct flavor and impressive size, it is a favorite in fine-dining seafood restaurants and household kitchens alike. It is a "clean" fish, meaning it lacks the strong fishy odor associated with other varieties.
Best For: The legendary Surmai Tawa Fry, Goan Fish Curry, or grilled steaks. Its firm structure makes it the best choice for BBQ and seafood platters.
Chef’s Tip: Surmai absorbs marinades beautifully. For a classic coastal taste, use a "Recheado" or "Malvani" masala. Since it is a lean fish, be careful not to overcook it; a thick steak usually needs just 4–5 minutes per side on a hot tawa to remain juicy and tender inside.
